Takizawa Honten, established in 1872 in Narita, Chiba, draws on a centuries-old well whose water became so renowned for its purity that pilgrims to the Naritasan temple would carry it home as a cure, giving rise to the brand name Chomeisen, meaning spring of long life. That same weakly alkaline well water remains the foundation of the brewery's sake today, blended with carefully selected rice to produce a rich, well-rounded style suited to food pairing.
