Aotoshichisei was created in 2009 by Hideki Aoto, the fifth generation of Aoto Shuzo in Shimane Prefecture, inspired by the sight of koji spores scattered across a blue fermentation tank, which he likened to stars in a universe. All expressions in the line are released as muroka genshu, undiluted and unfiltered, to preserve the inherent character of each brew.
