A junmai ginjo from the Zuisen label at a small Iwami-cho, Tottori brewery founded in 1907. The water source is mineral-rich underground water filtered through sandy strata below the Chugoku mountain range. The Zuisen style blends Gohyakumangoku and Tamaei rice, earning a reputation as a classic 'inaka-zake' (rural sake) with a distinctive, layered flavor the brewery calls 'kasuri no ajiwai.'
