By preparing with high -hardened water and preparing with "mountain elimination", it will be a rich and sour liquor with a umami. In order to bring out the flavor of rice, which is a characteristic of the sake quality of Iwanoi, we are particular about the "mountain abandoned preparation", and two -thirds of the overall amount of preparation are brewed with "mountain abolition".

沿革
- 1609The mast of the Spanish galleon San Francisco, wrecked off the coast of Onjuku in 1609, was later used as a beam in the brewery's thatched-roof main building.
- 1723Iwase Sake Brewing is said to have been founded in 1723 (Kyoho 8), passed down through generations initially as a side business of the family head.
- 1930The brewery began brewing Ginjo-shu sake in 1930 (Showa 5), going on to win numerous awards in the years that followed.
- 1947In 1947 (Showa 22), Iwanoi won the top prize (Shuseki) at the National Sake Competition (Zenkoku Seishu Kanpyokai).
