這款大吟釀由千葉縣御宿的岩瀨酒造釀製,採用山田錦,以硬度約240度的日本頂級超硬水釀造。從貝殼地層蓄水層汲取的這種富含礦物質的釀造用水促進了旺盛的發酵,造就了骨架扎實、酒體強勁的酒質。岩之井品牌的山廢純米大吟釀於2016年在葡萄酒倡導者雜誌800個品牌中榮獲第二名,引發了世界範圍內的廣泛關注。

岩瀨酒造創業於享保八年(1723年),自大正時代起專注於清酒釀造,1947年榮獲全國清酒品評會首席獎,現任第11代當主。酒藏距海岸約10分鐘,地下水穿過貝殼層,硬度極高,富含鈣和鎂,發酵旺盛,形成濃郁而帶有酸味的風格。為充分發揮米的風味,酒藏堅持「山廢」釀造法,約三分之二的產量採用山廢仕込。
