岩瀨酒造創業於享保八年(1723年),自大正時代起專注於清酒釀造,1947年榮獲全國清酒品評會首席獎,現任第11代當主。酒藏距海岸約10分鐘,地下水穿過貝殼層,硬度極高,富含鈣和鎂,發酵旺盛,形成濃郁而帶有酸味的風格。為充分發揮米的風味,酒藏堅持「山廢」釀造法,約三分之二的產量採用山廢仕込。
