Description

山废仕込み的柑橘酸,通过在寒冷最为严峻的1月前后将酒置于搪瓷槽中,降低酒藏内温度,进行低温发酵,缓慢地推进发酵过程。因此,感受到的不是粗犷的酸味,而是温和的柑橘酸氛围。为了充分发挥这种酸味,使用了比吉藏标准米更易溶解、带有早稻田特有青涩与硬度的米,仕込み时略带苦味与淡淡氛围。此外,采用「麻糠仕込み」增加了口感的顺滑度,是一款可以享受甜味、苦味、涩味在酸味的温柔调和下所呈现出米的果实风味的酒。
