这是花场(花場)酿造原点的熟成酒。2005年酿造年度(BY)首次以山废工艺酿造无酵母酒。目前所有酒品均不添加酵母,但最想传承的味道就是这款酒。山废工艺的发酵与充满力度的酸味,诠释了"发酵=防腐剂"的概念,是将"熟成"这一酒的变化转化为助力的花场酿造之原点,也是不可或缺的要素。由于搪瓷罐不进行温度管理,每个酿造年度的气候与仕込时期不同,发酵强度也会有所变化。发酵强则保存性高,需要更长的熟成期;反之则酸味温和柔顺,熟成期较短。也就是说,通过熟成期来调整奈良吉野各酿造年度与仕込期间的差异,从而实现稳定。这种熟成与调整,正是顺应每年气候与米的状态变化、与农业和谐共生的技艺。
