水酛是一種將生米浸入水中、使乳酸菌在水中增殖的釀造工藝。與發酵的原理相似,呈現出令人聯想到優格和起司的細膩風味。這是在腐敗、發酵、釀造尚無把握的時代所造就的獨特風味。釀造初期製作的「粗やし水」受9月下旬氣候中繁殖的乳酸菌和微生物影響,因此每年都會釀出不同的韻味,隱藏於香氣的深處。與常見的優格和起司截然不同,潛藏於深處的神秘韻味正是水酛的魅力所在。同樣利用乳酸菌發酵引出酸味的山伏仕込與生酛仕込,為控溫而在低溫下發酵,而水酛則使用溫水。正因為充分利用了當下可行的工藝特性,水酛是唯一能引出其他工藝無法表現的「發酵感」的釀造方式,因此在釀造時不以追求酒的風味為優先,而是更注重展現水感。希望您能透過這種出自毫不妥協的釀造與發酵理念、誠摯而純粹的哲學,盡情享受這令人著迷的世界。
