Sumiyoshi is produced by Taruhei Shuzo, a brewery founded around 1695 in the Yamagata Prefecture mountains and now among the region's most tradition-bound houses. Every sake in the lineup is pure junmai, pressed and aged without any activated carbon filtration, a commitment that yields the brewery's signature amber tint, cedar fragrance from Yoshino cedar casks, and a firm, acidic backbone that has attracted devoted followers since the brand was featured in the food manga Oishinbo.
