Founded by Matsuemon Suzuki in 1689 in Daisen, Akita Prefecture, Suzuki Brewing is one of the oldest sake breweries in the region and has operated under the Hideyoshi name since 1848, when a ruling lord reportedly exclaimed its sake was extremely good. Now in its 19th generation of family stewardship, the brewery uses only local Akita sake rice to create deeply food-friendly sake with rich, rustic character. The Hideyoshi Junmai Daiginjo won the trophy at the 2019 International Wine Challenge, confirming the brewery's standing on the international stage.
