This junmai ginjo uses Miyama Nishiki, a cold-climate variety well-suited to northern Yamagata, brewed with the mineral-soft water from Mount Chokai. It expresses the rice's natural umami in a measured, understated way, with a clean palate and a restrained, lingering finish.
