
Labeled Chokarajunmai ('super-dry junmai'), this version uses the Yamagata-original Dewa no Sato rice polished to 70%, producing a sake with a nihonshu-do of +15 to +20. Despite its extreme dryness on paper, the rice's large shinpaku and the soft Mount Chokai water keep the body clean and surprisingly approachable.
