Brewed from 100% Yamagata-grown rice polished to 50%, this junmai daiginjo is produced by Ouujiman (Okuu Jiman), a brewery in Tsuruoka revived after a 2011 crisis with guidance from Tatenokawa Shuzo. It represents the house's commitment to clean, elegant umami built entirely on Yamagata-origin ingredients.
