Wagauji Nakadori Nama is drawn exclusively from the middle section of the press, the portion considered to have the fewest off-notes and greatest purity, from Yamagata rice polished to 55%. Released unpasteurized, it carries a fragrant quality and the sweet, well-defined rice character the Wagauji brand pursues.
