Wagauji Kamenoo is a junmai daiginjo brewed from Kamenoo, the ancient heirloom rice variety that serves as an ancestor of Hitomebore, Akitakomachi, and many modern sake rices, polished to 50%. The Ouujiman brewery's use of this rare heritage grain connects the glass to the deep roots of Tohoku rice cultivation.
