Kazenoshizuku Yukigakoi, meaning snow shelter, is brewed by Iiyama Shuzo in one of Japan's heaviest snowfall regions in northern Nagano. The sake is aged through winter under the protection of deep accumulated snow, which provides natural insulation and stable cold temperatures that slowly mellow the flavor. This traditional snow-aging method imparts a soft, rounded quality to the sake's texture and taste.
