Hyogo-grown Yamada Nishiki polished to 65% is used for this tokubetsu junmai, which carries an exceptionally dry profile at a nihonshu-do of +15 while retaining clean rice umami. Named after the historic Meitou Masamune tradition of the Harima region, it is fire-pasteurized (hi-ire) for stability and a rounded finish.
