Okura YamahaiJunmai Hinohikarinanaju from KK Ookurahonke in Nara is a pure rice sake brewed using the yamahai method with Hinohikari rice polished to 70 percent. Hinohikari is a table rice variety commonly grown in western Japan, and its use at 70 percent polishing produces a sake with rustic, rice-forward flavors. The yamahai process adds a characteristic lactic depth and tangy backbone to this straightforward junmai.
