This Tokubetsu Junmai from Nara's KK Ookurahonke pairs Yamadanishiki rice with the yamahai starter method and is drawn directly from the tank as jikagumi. The combination of Yamadanishiki's reliable quality and the unfiltered, direct-draw format produces a sake with a robust, honest character and textured mouthfeel.
