- 1767Founded by first-generation Tajimaya Jūzaemon. Originally operated as a sake wholesaler, inn, and restaurant business.
- 1951Imayotsukasa Shuzo was formally incorporated as a company on October 1, 1951.
- 2006Switched to producing 100% junmai sake with no added alcohol, a first-of-its-kind move among postwar Niigata breweries.
