Kenshin is brewed by Ikedaya Shuzo, a brewery founded in 1812 in Itoigawa City, Niigata Prefecture, at the foot of the Japanese Alps along the ancient Shio-no-michi salt road. The brand name pays homage to Uesugi Kenshin, the legendary warlord of Echigo who famously sent salt to his rival Takeda Shingen across this very route. Using snowmelt from Mount Hakuba filtered through granite to produce exceptionally soft water, the brewery crafts sake characterized by clean, mild umami and a refreshing finish.
