Kenshin Junmai Ginjo Aiyama Namazake from Ueno Shuzo in Joetsu, Niigata, uses Aiyama rice, a variety from Hyogo Prefecture known for producing sake with a characteristic melon-like fruitiness and soft, full-bodied texture when brewed to ginjo standards. As a namazake, the sake is entirely unpasteurized, preserving the fresh, vivid aromatics and lively texture that would be moderated by heat treatment. Niigata's soft water and cool climate complement Aiyama's natural richness, producing a junmai ginjo of balance and aromatic presence.
