Kannihonkai is the flagship brand of Nihonkaishuzou, a brewery established in 1888 in Hamada City, Shimane Prefecture, situated 200 meters from the Sea of Japan and shaped by the cold brewing (寒造り) season that runs November through March. The brand name, meaning circling the Sea of Japan, is inspired by the vast expanse of that sea, and all expressions from daiginjo to junmai share a defining characteristic of clean, crisp finish with layered umami. The brewery's coastal location beside Hamada Port, where nodoguro, horse mackerel, and flounder are landed, has long oriented its sake toward pairing with local seafood.
