Afs is the signature aged-sake line of Kidoizumi Shuzo in Chiba Prefecture, its name formed from the initials of the three brewers who first developed it. Produced using a method called zero-stage brewing, which applies high-temperature yamahai mash directly without the standard three-stage addition process, each batch takes more than ten times the effort of conventional sake. The resulting sake is then aged for years, sometimes decades, building a dense concentration of natural acidity and umami that sets it apart from anything else in the category.
