Description

Yamada Nishiki polished to 50% undergoes extended aging (choki-jukusei) before bottling as muroka genshu, giving this 12-BY junmai ginjo a developed depth and roundness unusual in a ginjo-class sake. Long maturation in undiluted, non-charcoal-filtered form preserves the full evolution of the rice's flavor over time.
