Hidematsu Aka uses Koshi Tanrei, a Niigata-bred sake rice, and is brewed as a honjozo by Oumon Shuzo. Koshi Tanrei was developed specifically for Niigata's soft-water brewing environment, producing a light-bodied, refined style.
