Hidematsu is one of the brands produced by Oumon Shuzo in Shibata City, Niigata Prefecture, a brewery with more than 200 years of history tracing back to 1790. The brewery is recognized as a pioneer in welcoming female brewery workers, having produced Japan's first certified female toji in 1979. Its sake is built from locally grown Niigata rice varieties and soft water drawn from the Kaji River fed by the Iide mountain range, expressing the refined, gentle sweetness and composed strength associated with the Oumon house style.
