Soukou is produced by Soukou Shuzo in Oita City, Oita Prefecture, a brewery founded in 1864 that originally produced sake, mirin, shochu, and shiro-sake before focusing on premium sake under the fourth-generation leadership. The brewery uses subterranean water from the Ono River and Oita-grown sake rice, including the locally suited Gin no Sato variety, alongside high-ester aromatic yeast to produce junmai-style sake that achieves an unusually fragrant and clean character. Soukou has received gold medals at the National Sake Competition and has placed at the IWC.
