Founded in 1901 in Saku, Nagano, Tomono Sake Brewing Co., Ltd. (Bando Shuzo) draws on Yatsugatake mountain aquifer water and Nagano-grown sake rice to brew the Sawanohana brand, whose name comes from the wildflowers of the Saku marshlands. The brewery's owner-toji Takayuki Bando leads a small team committed to what they describe as faithful adherence to basics at every step of production, and the result is a fresh, slightly effervescent character achieved by protecting the sake's freshness from pressing through storage. The range extends from local everyday sake to junmai daiginjo, all brewed to a consistent quality standard.
