Kanenaka is the flagship brand of Nakashimaya Shuzojo, a brewery founded in 1823 and located in Shunan City, Yamaguchi Prefecture, where it has built a reputation for kimoto-style brewing combining traditional techniques with modern sensibility. The eleventh-generation owner revived the laborious kimoto method, which cultivates natural lactic acid to develop complexity, reflecting the brewery's philosophy of sincere sake-making rooted in the local community. Nakashimaya Shuzojo received an IWC Trophy in 2020 for its commitment to this style.
