Gikyo

Yamachuhonke Shuzo, located in Aisai, Aichi Prefecture, traces its sake-making origins to the mid-Edo period and adopted the Gikyo brand name from a piece of Meiji-era commercial history, when the founding family honored a fixed-price contract with retailers even as raw material costs spiked, earning a reputation for integrity and chivalry. Gikyo is brewed almost exclusively with Yamadanishiki from the designated Special-A growing district of Tojo in Hyogo Prefecture, expressing what the brewery describes as a powerful, full-bodied junmai character entirely without reliance on ginjo-style aromatics. The brewery's signature long-term aged expressions, blended under the Myo and Kei labels, add rounded complexity built from five or more years of in-house cold maturation.
