Choseimai Chokodaigin 10 is a rare aged daiginjo from Kuze Shuzo in Ishikawa Prefecture, matured for more than ten years using the brewery's proprietary Choseimairice and hard underground well water. Decades of patient cellaring mellow the base daiginjo into a deeply complex expression with notes of dried fruit, honey, and a silky, lingering warmth.
