
Goto Shuzoten, founded in 1788 in the Okitama region of Yamagata, is named after Benzaiten, the Buddhist goddess of music and fortune, and dedicates its craft to Yamagata's exceptional local rice varieties: Tsuyahime, Dewasansan, and the ancient heirloom Kamenoo. Tsuyahime, Princess of Luster, was developed as a premium Yamagata table rice and only recently adapted for sake production, prized for a clean brightness that carries into the glass. Highly aromatic for a tokubetsu junmai, with green apple on the nose and a juicy, umami-rich palate, lively acidity, and a pure, clean finish that reflects what Yamagata's rice breeding program has made possible.
