Tanzawasan Funashibori Junmai Namagenshu from Kawanishiya Shuzoten in Kanagawa is pressed using the funashibori method, where sake drips slowly from cloth bags suspended in a traditional wooden fune press, collecting the finest, most delicate fraction. This Kanagawa sake, named after the Tanzawa mountains that dominate the region's landscape, is bottled unpasteurized and undiluted, preserving its freshest expression.
