Junmai brewed from Yamada Nishiki rice polished to 65% in Fujiseda, Shizuoka. Yamada Nishiki at this polish ratio delivers a fuller rice-derived umami than the ginjo-grade expressions, softened by the low-mineral Setogawa aquifer water.
