Junmai ginjo made from Dewa Sansan rice polished to 50%, named after Sakatamaiko and produced at Eau de Vie Shonai using the brewery's characteristic deep-well water from the Japan Sea coast. Dewa Sansan, a Yamagata-bred ginjo rice variety, contributes a soft, refreshing character suited to the brewery's food-pairing philosophy.
