It is Junmai Daiginjo brewed by the mountains of traditional brewing techniques. Yamada Nishiki (from Hyogo Prefecture) was made with a rice polished rice. It is a raw sake with a gentle fragrance and a beautiful umami. Good compatibility with the structure of Ise shrimp and you can feel the sweetness more.
