这款大吟酿由千叶县御宿的岩濑酒造酿制,采用山田锦,以硬度约240度的日本顶级超硬水酿造。从贝壳地层蓄水层汲取的这种富含矿物质的酿造用水促进了旺盛的发酵,造就了骨架扎实、酒体强劲的酒质。岩之井品牌的山废纯米大吟酿于2016年在葡萄酒倡导者杂志800个品牌中荣获第二名,引发了世界范围内的广泛关注。

岩瀨酒造创业于享保八年(1723年),自大正时代起专注于清酒酿造,1947年荣获全国清酒品评会首席奖,现任第11代当主。酒藏距海岸约10分钟,地下水穿过贝壳层,硬度极高,富含钙和镁,发酵旺盛,形成浓郁而带有酸味的风格。为充分发挥米的风味,酒藏坚持"山废"酿造法,约三分之二的产量采用山废仕込。
