Akita Komachi polished to 60% is the sole rice in this tokubetsu junmai, brewed with natural flower yeast and Hakusan spring water at a Gifu brewery founded in the Edo period in 1740. Flower yeast fermentation imparts a characteristic floral aromatic complexity alongside the clean grain character of Akita Komachi.
