Hakurosuishu

Hakurosuishu is produced by Takenotsuyu Co., a brewery founded in 1858 at the foot of the sacred Mount Haguro in Yamagata Prefecture's Shonai region. The brand was created in 1992, its name drawn from a Li Bai poem, and is built around 100% Shonai-native sake rice varieties — including Dewa Sansan, Dewa Kirari, and Yukionna — polished using the traditional issho-mori koji-buta single-tray koji method and water sourced from a 300-meter-deep silica aquifer, a process that won five consecutive gold awards at the National New-Brewed Sake Contest.
