A junmai daiginjo crafted from Niigata's Koshi Tanrei rice, polished to 35%, using spring water drawn from a hillside well behind the brewery in Nagaoka. Koshi Tanrei's fine milling properties allow for highly refined polishing, yielding an elegant, well-rounded sake with exceptional clarity.
