Brewed at Aoki Shuzo in Uonuma, one of Japan's snowiest regions, this ginjo draws on water sourced from the pristine snowmelt environment that has shaped Niigata's sake culture for centuries. Rather than pursuing the region's trademark tanrei-karakuchi (light and dry) style, Kakurei aims for tanrei-umakuchi, balancing clean elegance with genuine rice umami in every sip.
