Description
Ryokuinsanka, literally green shade, three flowers, is a pasteurized Junmai Daiginjo from Akishika that shows a different dimension of the brewery's range by allowing the sake to settle and integrate through the hiire (heat pasteurization) process. While Akishika is best known for its muroka nama genshu lineup, this expression demonstrates how the brewery's organically grown rice and high-dissolution koji method produce depth that remains compelling even after pasteurization. The finished sake has the refined grain complexity expected of daiginjo polish alongside the structured, food-friendly character the brewery consistently pursues.
