Ajigasawa Tsugaru Gokukarakuchi is a tokubetsu honjozo polished to 60% from locally grown rice, developed jointly with a sake wholesaler as a private-label super-dry expression. It carries a sake meter value of +11, with rice umami that blooms briefly on entry before cutting away sharply, making it well-suited to seafood.
