Tamasakae

Okamura Honke, founded in 1854 in Toyosato, Inukami-gun, Shiga Prefecture, brews exclusively with Omi-grown rice — primarily Tamasakae and Ginfubuki varieties cultivated within ten kilometers of the brewery using Shiga's environmentally friendly farming standards. The brewery's signature production method is kibunebukuro-shibori, a two-day gravity-only pressing in wooden tank bags unchanged since the Edo period. Tamasakae, a rice variety well suited to clean, dry sake, gives the Okamura Honke lineup its characteristically focused structure.
