Akita Shurui Seizo, located in Kawamoto district of Akita City where three rivers converge, produces Shimizunomai using exceptionally soft groundwater drawn from the Ou Mountain range with a hardness of just 49.7. The brewery's Yamauchi toji lineage carries forward generations of traditional brewing craft suited to Akita's severe winters, which support long, slow fermentation. The result is sake known for its clean finish and gentle mouthfeel.
