SAYKOH is the prestige label of Takenoi Shuzo Co., Ltd., founded in 1865 in Hokuto City, Yamanashi, where the brewery has drawn water from the Yatsugatake mountain range across six generations of the founding Shimizu family. Master brewer Koichiro Shimizu, who grew up inside the brewery and later studied fermentation at Tokyo University of Agriculture, conceived SAYKOH as a junmai daiginjo made with rose-derived yeast, one of only around 30 breweries in Japan approved to use this yeast and the only one applying it at the daiginjo level. The brand represents the brewery's highest expression of its craft.
