Odayaka is brewed by Niida Honke, a Fukushima Prefecture brewery established in 1711 with over 300 years of continuous operation. Marking their 300th anniversary in 2011, the brewery transitioned to brewing exclusively with 100% organically cultivated Shizenmai rice grown without pesticides or fertilizers, using native yeast and pure junmai methods, making Niida Honke one of just two breweries in Japan to brew solely with self-cultivated natural rice. The Odayaka label, whose name means calm or tranquil, reflects this philosophy of harmony with the land.
