Kubiki Sake Brewing Co., Ltd. (้ ธๅ้ ้ ) was founded in 1697 in Kakizaki, Joetsu City, Niigata, and the Koshijinokobai brand name was chosen to evoke the image of red plum blossoms blooming along the Koshi Road (the ancient route through Niigata), expressing the sake's clean elegance and the spirit of spring renewal. The brewery uses rice contracted entirely from Kakizaki farmers and draws on two local water sources including the Heisei Famous Water Hundred Selection-recognized Ooguchizumi spring, applying the skills of the Kubiki toji lineage in pursuit of food-friendly sake. Current toji Tsukasa Yoshizaki, who joined in 2017, aims for sake that delivers genuine emotion through the flavors of Kakizaki's land and water.
